Restaurant style Kadhai paneer
Ingredients:
Paneer: 250 gms
Onion: one small, cut in one-inch pc
Bell pepper: one small, cut in one-inch pc
Colorful pepper: one small, cut in one-inch pc
Gravy:
v Onion: 2 small, roughly chopped
v Tomato: 1 roughly chopped
v Garlic cloves: 2
v Ginger: 1 inch pc
v Cumin seeds: 1 TSP
v Black pepper: 4,5
v Green cardamom: 2
v Cloves: 2
v Bay leaf: 1
v Dalchini: half stick
v Star: 1
v Chili powder: 3 TBSP
v Kashmiri chili powder: 1 TBSP
v Turmeric: 2 TSP
v Oil – 5,6 TBSP
1. Cut paneer into cubed. If the paneer is store brought, soaked in warm water or microwave paneer for 2,3 minutes.
a. : now marinate paneer with, add a pinch of turmeric, then add 1 TSP of chili powder, add salt to taste. Now squeeze half lemon in it.
2. Toss everything together.
3. Now keep this aside for a few minutes.
4. Now gas is on high flame, put a pan on gas when the pan is hot add oil in it.
5. When the oil is hot enough add 1 TSP Cumin seeds, then add 4,5 black peppers, 2 cloves, 2 green cardamoms, give it a mix, now add ginger and garlic, quickly sauté this. Now add roughly chopped onion and tomato.
6. Mix this well, add ½ cup of water and cover this and cook this for 5,6 minutes.
7. When this is done, add in a food processor or mixer jar. Let it cool this mixture for some time.
8. Now sauté colorful (Red, yellow, green) pepper with little oil in it. When they are done take that out in one plate.
9. Now sauté onion with little oil in it. When they are done take that out in one plate.
10. Sauté marinated paneer. Do it until it will turn light brown. When it’s done take out in one dish.
11. a Mixture in a food processor is cool now. On the other side make a paste for gravy.
12. Add oil in a pan, add bay leaf, star, then dalchini, now add puree in it.
13. Add 2 TSP of chili powder, a pinch of turmeric, 1TSP of coriander powder,1 TSP of garam masala, now add 1 TSP of Kashmiri chili powder, mix this well, Add salt to taste. Cover this and cook this for 4,5 minutes.
14. Now add sauté onion, pepper, and paneer. Give this a good mix. Now over this and cook this for only 2 minutes not more than that. Otherwise, the texture of the paneer will be changed, it will become rubberish.
15. Add kasuri methi in it.
16. Your Restaurant style Kadhai Paneer is ready. You can serve this with jeera rice, naan or paratha.
