Chole Masala
Recipe 1 
Punjabi Chole Masala 
Jai Pawar 
Preparation Time: 15 minutes 
Cooking Time: 20 minutes 
Ingredients:
Chole / Chickpeas: 2 cups, Soaked for 7-8 hrs 
Salt to taste 
Pinch of soda 
Ghee (Clarified Butter ) 2 tablespoon
Oil 2 tbsp 
Cumin seeds (Jeera )1 teaspoon 
Onion, finely chopped-2 
Ginger piece shredded-1/4inch 
Garlic roughly shredded-4 cloves
Bay leaves (  using curry leaves bay leaves are not available)-2
Green chilies chopped-2 
2 tsp Red chili powder
Tomato finely chopped-2 
  1/4 tsp Turmeric powder 2
1 tbsp Garam masala
1 tablespoon Dried Anardana powder 
Readymade MDH chole masala 
Water
Methods:
Soaked Chickpeas for 7-8 hrs with one tea bag.
In a pressure cooker, add soaked chickpeas add salt to taste, and pinch of ENO /Soda  
Finely chopped onion and Tomatoes. 
Now Shred Ginger and garlic. 
Now start the stove, Put the pan on medium flame,
 In a pan add 2 tablespoons of ghee, and 2 tablespoons of oil. 
After heating, this mixture add cumin seeds, Jeera. Add Giner garlic paste, curry leaves, slits of green chilies, red chilies, onion, Wait till onion turns to light brown. 
 - Add tomatoes now and make sure, it turns to soft,
 and add the dry masalas – red chilies powder, turmeric powder , garam masala, salt & dried anardana - Add the chanas to the masala, Give them quick mix. Mashed chickpeas with wooden beater or spoon.  
     
and water and cook it for 5 to 6 minutes
_Serve chole with Naan , Rice or Paratha
