Kadhi/कढ़ी /Simple Indian Food 8/ Sadha Jevan 8/ Recipes for beginners
Kadhi is a popular Indian dish, made with chickpea flour and yogurt/ curd as the main ingredients. There are many types of kadhi, but this is a simple yet popular Maharashtrian recipe for both lunch and dinner.
These are the ingredients we will be using today:
- 1 cups of plain yogurt/ Curd
- 3 tablespoons of chickpea flour (besan)
- 3 cups of water
- 4 green chillies, halved lengthwise
- 1 tablespoon of minced fresh ginger root
- 4 minced garlic cloves
- 1 tablespoon of white sugar for taste (optional)
- 1/2 teaspoon of ground turmeric powder
- salt to taste
- 1 tablespoon of vegetable oil / or 1 tablespoon of ghee
- 1 sprig of fresh curry leaves
- 1 teaspoon of cumin seeds
- 1 teaspoon of mustard seeds
- 1 pinch of asafoetida powder
- 1/4 cup of chopped cilantro leaves
- Cilantro stems for more flavor
- Kasuri methi
Recipe:
- Mix the water, yogurt, and chickpea flour together in a large saucepan until smooth
- Heat the oil or ghee in a pot over medium heat
- Fry the curry leaves, cumin seeds, mustard seeds, and asafetida powder in the ghee or oil until the seeds splutter
- Add minced ginger and garlic paste into this. Make sure the rawness of the garlic and ginger is gone. Also add chopped cilantro stems.
- Stir this mixture into the pot with the cilantro stems.
- Add mixture of water, yogurt, and chickpea flour together in a large pot and whisk until smooth (Be careful so that the kadhi does not curdle.)
- Bring it to a boil and mix the ingredients. Then bring it to a boil once more.
- Serve kadhi with cooked rice or khichadi.
