How to freeze leafy vegetables? Fenugreek Leaves (methi): 1.      Wash methi thoroughly in tap cold water. I’m sure are doing this process each and every time. In this process we will remove its dirt. 2.      Pluck its leaves. In this don’t take woody stems or damaged leaves. 3.      Strain these leaves. 4.      If methi is still damp, u can use a paper towel to remove its moisture. Take some leaves in a paper towel and press that towel gently. 5.      Take that bunch and make roll-out of it. And chop them roughly. 6.      Don’t chop fine otherwise, else juice from methi leaves will come out. 7.      By doing these we can stop enzymes' actions. Raita: Ingredients: Yogurt: 1 cup Cucumbers:  2 Tomatoes: 1 Onions: half of it Fresh coriander leaves:  chopped 1 tablespoon Green chili: 1 small Cumin powder roasted 1 teaspoon + for garnishing Cumin seeds: 1TSP Ghee: 1 TSP Salt to taste Method 1.      Finely chop onions, cucumbers and tomatoes and place in a large bowl. 2.      Then finely chopped chili, and coriander and mix this in a bowl. 3.      Prepare tadka, keep the pan on medium flame, then add 1 tsp of ghee, when ghee is hot enough, add cumin seeds. 4.      Transfer raita into a serving bowl. Garnish with cilantro. 5.      Serve chilled.

Mirchi Cha techa!! Ingredients: Green chilies big non spicy: 3,4   Green chilies small one Spicy: 8, 10   Garlic clove: 1 or 2 Ground nuts: ½ cup Cumin seeds: 1 TSP Oil: 2 TBSP Turmeric: Pinch Recipe: 1.      Clean green chilies with water and remove stalk. 2.      Keep the pan on the medium flame. 3.      Add green chilies and garlic clove, and ½ TSP of oil. 4.      Roast Them, till they are turn to slightly brown. 5.      Take this out in mixer jar, add cumin seeds. 6.      Make coarse mixture out of this. 7.      Dry roast groundnuts, when they are turn to brown, remove skins of groundnuts. 8.      Add groundnuts, pinch of turmeric, and salt to taste. 9.      Make coarse mixture out of this. 10.   Add 2TBSP oil in Pan.
