Maharashtrian Momos/ Labad wange / Traditional Recipe



Labad Wange( Eggplant) a.k.a Maharashtrian Momos is my Dadi's recipe. Growing up we never had nonveg or eggs so this is our "Sunday Special" recipe. This is a kind of healthy recipe because we are using 3,4 types lentils in this and we are steaming these momos.

We can divide this recipe into 3 parts
1. Stuffing
2. Covering
3. Onion Curry.

Ingredients:
Stuffing:
Moong Daal: ¾ cup
White Urad Daal: ¼ cup
Split Bengal Gram: ¼ cup
Chili paste: 7 to 8 chilies
Ginger Garlic paste: 2 TSP
Warm oil: 2TBSP
Eno: Pinch of it
Salt as per your taste

Covering:
Wheat Flour: 2 cups
Bengal gram flour: ¼ cup
Chili powder: 2 tsp
Turmeric powder: 2 tsp
Oil: 2 TBSP
Water: 1 cup
Salt as per your taste


Onion Curry:
Roughly Chopped onion: 3 cups
Ginger Garlic paste: 1 TBSP
Oil: 1 to 2 TBSP
Water: 2 cup
Chili powder: 3 TSP
Turmeric powder: 1 TSP
Coriander cumin powder: 1 TSP
Garam Masala: 2 TSP
Salt as per your taste

Garnishing:
Fresh Coconut
Cilantro
Poppy seeds
