1st Treat : Homemade Crispy Samosas

Hi guys !!


This is my first blog and I am very excited about this.

I am Foodie kind of person I love to eat and like to try different kind of food, being foodie I also like to cook varieties of recipes. So guys this is my 1st recipe as blogger.

I am from (Mumbai, Pune, Nashik, )Maharashtra. India is place where you can see diverse food items , but my 1st recipe is from North side of India.

"SAMOSA"

I will tell you how to pronounce it .. Do you know Hermosa Beach in California.. So sounds like Hermosa but it is "SAMOSA" :)

Basic Ingredient in Samosa is mashed Potato, and this potato has crunchy crispy cover.

So will quickly go through its Recipe:


Ingredients
Time required for preparation : 25 min
A. Stuffing:

1. 4 to 5 Medium size boiled , peeled , smashed Potatos
2. Green Peas and carrot -1/2 cup
3. Cumin Seeds - 1/2 Teaspoon
4. Chopped Cilantro- 1 Tablespoon
5. Shredded Ginger - 1 Teaspoon
6.  Cinnamon Spice/Samosa Masala   ( This Samosa Masala is made by MOM , you can use any generic curry masala )
7. Crushed Green Chilies 4 to 5
8. Curry Leaves 6 to 7
9. Salt to Taste.
10. Oil : 2 Tablespoon




B. Dough or  Covering
1. All Purpose flour 300 gm
2.Ghee/ Butter 80 gm
3. Carom Seeds - 1/2 Teaspoon
4. Water 30 ml
5. Salt to Taste


C.Frying
1. Oil to Deep fry



Recipe for Stuffing: 

 1.Put a pan on stove , pour oil in it , heat the oil, after add cumin seeds in it , add shredded ginger, crushed green chilies then add curry leaves , fry till you get aromatic smell but you have to be careful about it , Do not Burn it.

2. Now add mashed potatoes and green peas , Samosa Masala  and salt to taste in Pan and Fry it for 5 minutes.

3. Now keep stuffing aside for cooling.


Recipe For Dough:

1. Take a dough maker , add 300 gms of all purpose flour in it.

2. Take 80 gm of ghee or butter , add this in small pan and melt it.

3. Add this melted butter in dough maker.

4. Add Carom Seeds and salt in dough

5. Add 30 ml of water in it

6. Start dough maker/ Kneed with hand for 5 min.

If you get the texture of dough like in photo , then your Samosa Will be definitely Crispy and crunchy.




(Note: This Dough Should not be too soft. It should look like in photo. )

Wrapping of Samosa :

1.Take dough and make 8 similar lime size ball.

2.Take one piece in hand and roll press it in your hand.

3. Roll this in Circular shape of 15 cm in diameter and its thickness should be around 1 mm to 1.5 mm.

4.Cut this into half .

5. Apply Water on straight side, then make a cone from it.

6. Fill stuffing in cone up to 3/4th height of cone.

7. Apply water on opening side.

8. Now pinch the corner of cone and sealed it.

9. Dust One tray with all purpose flour.

10. Place Samosa Gently in tray.

11. Now make another 15 Samosa with above method.



Frying Of Samosa:

1. Take a Pan for deep frying.

2. Add 3/4 th of oil in it.

3. Heat this oil on medium flame for 4 minutes.

4. After 4 minutes add 2 mm round size of dough in it, if this dough comes upward immediately , then your oil is ready for frying.(This was just to check whether oil is ready)

5. Add samosa according to size of your pan.

6. Deep Fry samosa till you get golden brown texture on cover.

7. Remove Samosas from pan and place it on towel paper to remove excess oil.



Now Friends, Samosas Ready for Serving, you can serve this with Tamarind Chutney or Ketchup when you Catch up with  Your Friends..
